We welcome you to come to our bar, located in the heart of Downtown, in the Downtown Commons, next to the Kimpton Sawyer hotel and Golden 1 Center, home of the Sacramento Kings.
Whether you are a local wanting to get some great sparkling wine and a cheeseboard before or after an event or are from out of town wanting a truly unique experience, we have something to make you pop! With more than 120 different Champagnes and sparkling wines by the bottle and another 12 by the glass, you won’t be bored. We have sourced our sparkling wines personally from all over the world and our Champagne from the smallest to the largest producers!

Chief Champagne Officer & Master Fizz Maker
Raymond James Irwin began his passion for Champagne while working at one of Cleveland Ohio’s top restaurants, L’albatros Brasserie + Bar. There, under Master Sommelier and General Manager, Brandon Chrostowski, he learned the art of hospitality and unparalleled service. At L’albatros, he was introduced to his first small house Champagne. After that, a love affair was born. Upon leaving Cleveland and performing around the world, Raymond James found himself in Chicago.
There, he was introduced to the United States’ oldest Champagne bar, Pops! While Raymond James continued into both the non-profit and corporate business world, the idea of bringing something so unique as a Champagne bar to his hometown never left him. In the fall of 2016, he got to work and by December 2016, he had filed Fizz LLC as an official business.
Since then, he has travelled the globe, determined to bring the most unique and interesting champagnes and sparkling wines to his home town and California’s capital city. Our Master Fizz Maker wants to bring the everyday joy to your life, and he believes the most human expression of that is through a glass of Fizz. He looks forward to providing you an experience unlike anything else!
Kathe was first introduced to winemaking as a teenager, while in Genoa, Italy. Years later she studied viticulture, enology, and sensory evaluation (designated as a “super taster”) at the University of Western Sydney (Australia), becoming certified as an Australasian Wine Specialist. She researched growing conditions in Tasmania and New Zealand for a thesis on Pinot Noir.
It was Sacramento’s own Russ Solomon who taught Kathe the fine art of pairing Champagne with caviar. After that, she was never the same. She embarked on professional study tours in wine regions of Spain and France, where her passion for Champagne and sparkling wine really developed. She was one of the early graduates of the Wine Location Specialist Program, sponsored by the Comité Interprofessionel du vin de Champagne in 2011. This was followed by further studies with the French Wine Society, San Francisco Wine Academy, and Culinary Institute of America (Greystone). She has participated in numerous Champagne master classes, including Christie’s London, with renowned Champagne authority, Tom Stevenson, and Dominic Demarville, Cellar Master of Veuve Clicquot Champagne House.
